Pomegranate Molasses Vinaigrette

Pomegranate molasses is a really incredible ingredient. If you don’t like regular molasses, you’re in luck because this isn’t anything like it. 

It’s sweet, tart, bright and tangy.  The viscosity is the only thing that is similar to your traditional molasses.  

I grew up watching Food Network. Every chef has their go-to items (aka secret ingredients) in a jam. This is definitely Bobby Flay’s.

Truth be told, it is probably the only real reason pomegranate molasses ended up in my house. The bottle stayed unopened for the longest time, until I finally utilized it and was hooked.

Pairings

This dressing is amazing in regular salads, but really- it holds so well in cooked pasta, grains, and over roasted vegetables. 

Use it like you would a balsamic vinaigrette and you’ll be happily surprised at how the simplest of recipes are transformed into something extraordinary.

Where to Find It

Pomegranate molasses is easily found in Middle Eastern Markets and specialty grocery stores. I’m not a fan of purchasing this as a boutique item, but if that’s the only way to access it - I will cosign and tell you it’s worth it. 

It’s the equivalent of purchasing fish sauce at an American grocery store. It’s really hard.

However, if I’m in the middle of Lubbock, Texas and the only way to get a specialty item for a dish that’s not easily available, I’m gonna bite down and buy it. 

Final Thoughts and Notes:

Use a good quality olive oil and a decent salt. Adding freshly ground black pepper, releases the oils and makes it much more fragrant.

These little things really make a difference when pairing this dressing with something simple. It transforms a rather mundane dish into your favorite salad that you’d purchase at a boutique deli.

Pomegranate molasses vinaigrette keeps remarkably well. Making it ahead gives this dressing time to marry.

If you happen to use a blender, it makes for a really rich, thick and creamy dressing. Have fun with flavor pairings and enjoy!
